Scrambled Eggs with Green Garlic and Mushrooms

This is mostly a spring dish, but if you can find green garlic or spring garlic, year round. They are the best scrambled eggs ever!!!! You can serve them for breakfast, as an appetizer, or just lunch.






Ingredients:


5 Green Garlic cut white part and green
1/2 Dozen Mushrooms cut in slices or use a small can of mushrooms
2 Eggs
Olive Oil
Salt


In a pan you add the olive oil and the green garlic until tender the remove from the pan. Add the mushrooms until done and add the garlic and the eggs and keep stirring everything to avoid burning on one side. Serve on a plate with chives.
